Who can say no to chocolate cake? It’s wet, it’s rich and its many layers are seductively dark and dangerously addictive. Indeed, few food products on the planet can compete with the delicacy of a good chocolate cake. Here is our selection of the best chocolate cakes in KL.

Scientists would point to the addictive quality of chocolate; it does, after all, contain biologically active compounds that can alter a person’s mood. While that’s true, we like to point out that the humble cake is a creation that strikes the balance between baking precision and simple enjoyment.

The ingredients needed to bake a decent version are minimal: butter, sugar, eggs, flour, cocoa powder, and baking powder. Yet the many combinations that flow from this basic recipe are immense.

Take a look at the best chocolate cakes in KL, available from cafes and bakeries in the Klang Valley. To Table and Apron, we found a flourless version that only has five ingredients. Elsewhere at Lingonberrywe found a massive creation sitting on a cake stand completely covered in chocolate crumble.

With that in mind, we did our legwork that took weeks of research (read: eating chocolate cake). This isn’t another meaningless roundup of the best dishes. We’ve personally been to these places, bought all of the cakes we’ve listed here, and broken down what exactly makes them good. All this in search of the best chocolate cakes in KL.

Coffee Tray

Those who prefer their cakes dense and decadent (perfect for sharing) can delve into the Tray coffee interpretation. It sports a generous layer of ganache on top that is at least an inch thick. We strongly recommend that you accompany it with a cup of black coffee if you are having dinner to reduce its richness. An advice ? We do not recommend reheating it in the microwave as it tends to dry out the moisture in the sponge.

Imagine a melted chocolate ganache poured over a small square of hot cake. That sums up the Muddy chocolate cake at Souka. Its small size is ideal for portion control and the slight salty note of the ganache is a welcome addition that balances out the sweetness of the treat.

Espresso Bar + Bake Shop Whisk

If you’re looking for a whole slice to eat on your own in one sitting (no one is judging), Whisk is the place to be. The dark chocolate cake features two uncovered layers of a light, ethereal sponge with a ganache in the middle. It’s simplicity at its best.

Good ground bakery

It’s a bit long to get to Good Ground, especially for a place that’s not entirely a cafe but a bakery that you pick up your orders from. Still, the chocolate cake here is decent and if you’re a walk-in customer, takeout is available but is sold in muffin size. Otherwise, the cake is available to order in 6, 8 and 9 inch rounds as well as a 12 by 12 inch square. The ganache is creamier than the rest we tried, making for a luscious bake enhanced by the topping of juicy berries carefully sprinkled on top.

Table and Apron

Belgian dark chocolate, eggs, cocoa sugar and butter. These five ingredients are enough for Table & Apron to concoct a quality cake. The result is an extremely dense cake that works best when eaten in groups. After all, the texture is closer to a soft chocolate truffle than a sponge cake covered in creams, with an exterior dusted with cocoa powder.

Chocolate World

If there’s ever an underdog on this list, it’s Chocolate World. While the brand was created in 2001, the master chocolatier has been working on their creations since 1991 already. The result ? A signature chocolate cake without all the bells and whistles that can stand on its own without relying on ganaches and creams. Indeed, the cakes are presented unassumingly in a cooler packed in yellow boxes when we purchase. Yet where it lacks presentation, it delivers taste and texture. The cake itself is laced with chocolate chips that harden when cold, making each slice a smooth bite-size treat that was pure indulgence.

Huckleberry food and fare

At RM19, Huckleberry’s chocolate cake is the most expensive of the lot, but we guarantee its excellence every day. There’s a strong chocolate flavor that hints at quality cocoa, which its makers use to great effect in the three layers of sponge that are as soft as they are ethereal. The slice stands out from other cakes with its outer coating of chocolate crumble which adds textural interest.

Jaslyn Cakes

We saved the best for last and the chocolate ganache cake from Jaslyn Cakes is the top. It’s everyone’s favorite place to order cakes and for good reason. The bakery-café uses quality ingredients without skimping on them and the chocolate ganache is certainly a good example. The ganache is the perfect consistency and just sweet enough with echoes of dark chocolate bitterness. Although it’s the only filling between the four layers of chocolate sponge, the whole thing is beautifully balanced so much so that eating a whole slice on its own isn’t sickening. This in itself demonstrates flavor mastery without having to rely on textural distractions or salt to compensate for an overly sweet creation.

Ingredients


Here’s how to do it:


  1. Preheat oven to 400 degrees F. Lightly butter six 3/4 cup ramekins then sprinkle with cocoa powder, removing the excess. Place the ramekins on a small baking sheet.
  2. Mix the chocolate and butter in a heatproof bowl and pour (without touching) barely simmering water into a saucepan. Heat, stirring often, until chocolate and butter melt and mixture is shiny and smooth. Remove from top of water and stir in vanilla and salt. Let cool slightly.
  3. In a large bowl, using a electric mixer on medium-high speed, beat together egg yolks, 3 tbsp granulated sugar and 2 tbsp cocoa powder until thick and smooth. Add chocolate mixture to yolk mixture and continue beating on medium speed until well blended. The mixture will be very thick.
  4. In a bowl, using clean beaters, beat the egg whites on medium-high speed until very foamy and thick. Sprinkle the remaining 3 tablespoons of granulated sugar, increase the speed to high and beat until stiff, glossy peaks form. Place half of the beaten egg whites over the chocolate mixture and stir until combined. Using a rubber spatula, gently fold in the remaining whites until no white streaks remain. Pour into prepared ramekins.
  5. Bake cakes until puffed and top is cracked, about 13 minutes. The inside of the cracks will look slightly damp.
  6. Remove from the oven and sprinkle with icing sugar. Alternatively, run a small knife around the inside edge of each ramekin to loosen the sides of the cake, then invert a dessert plate over the ramekin, invert the ramekin and plate together, lift the ramekin and sprinkle with powdered sugar. Serve immediately.

Rich, dark, and dare I say, wet, nothing beats a classic no-frills chocolate cake. This is what I turn to when I want the dessert to be really perfect. But if like me, you’re on a mission to make your chocolate cakes better, meaning deeper and more, uh, chocolate— then you’ve probably followed an overabundance of advice on the internet. You bought the Dutch cocoa powder. You used a combination of cocoa and chopped chocolate in the dough. You replaced white granulated sugar with dark brown. You added soy sauce. You even went the extra mile and covered it in creamy chocolate ganache. I too have tried a few things to enhance the flavor of my cakes, but there is one thing I have slept too long on: adding espresso powder.

As someone who doesn’t like coffee desserts, this not-so-secret ingredient never spoke to me. But recently a few professional bakers informed me that it would be not makes my cakes taste like a mocha coffee and inspired me to buy my first jar. According to Joanne Lee Molinaro, author of The Korean Vegan, if your goal is to take a bite of it and say, “Wow, that’s the most chocolatey cake I’ve ever eaten!” you just can’t skip the espresso. And keeping a stash of it in powder form is the quickest, easiest, and cheapest way to get it.

What exactly is espresso powder?

Contrary to popular belief, espresso powder, also called instant espresso, is not just ground coffee beans. It’s actually made from dark roasted coffee beans that are ground, brewed into espresso, dried, and then further ground into a very fine soluble powder. Unlike instant coffee, which is made from dehydrated coffee, espresso powder is much more concentrated and provides a more complex and deeper flavor. To understand the difference, just think about how a cup of espresso tastes compared to a regular cup of coffee. And even though espresso powder doesn’t make a very good drink, it Is amp up the flavor of chocolate treats like cakes (and also cookies, brownies, and frostings).

How does it make chocolate cakes more chocolaty?

“Espresso and chocolate have a lot of crossover in terms of flavor profiles, so they complement each other really well,” says Benjamina Ebuehi, author of A good day for cooking. Good dark chocolate usually has notes of fruitiness, bitterness and a bit of acidity, and the addition of a little espresso, whether in liquid or powdered form, enhances and balances these properties. .

Molinaro explains that using a good espresso also brings a creaminess factor to chocolate cakes: “This creaminess gives cocoa a smoothness and fatness. This is also why a cup of espresso and a piece of chocolate go hand in hand. While cocoa alone can taste flat and one-dimensional, cocoa with espresso tastes complex and intense. “It’s the difference between a cake that’s just dark brown and sweet and one that’s super chocolatey,” says Molinaro.

How can I add espresso powder to any chocolate cake recipe?

Espresso powder can be added to almost any chocolate cake recipe for an intensified chocolate flavor. Just know that since it is super concentrated, a little is enough. Your cake will only need about ½ to 1½ teaspoons, according to your preferences. Anything beyond that will lead to a more noticeable coffee or mocha flavor – if that’s what you’re after, feel free to use another teaspoon or two.

You can add the espresso powder directly to the dry cake ingredients, but Ebuehi’s favorite method is to dissolve ½ teaspoon of espresso powder in hot water before adding it to the batter. “Adding hot water extracts all those wonderful flavor particles. It also ensures that the coffee is properly dissolved and evenly dispersed throughout the batter. If you go this route, be sure to account for the extra liquid you will be adding. .

Alternatively, you can use real espresso, which is a great option for those with an espresso machine at home (fYI, here are our favorites). For the vegan chocolate cake in his cookbook, Molinaro extracts as much flavor as possible from chocolate and coffee by heating cocoa powder, a glass of espresso, water and vegetable oil over heat. sweet until you get a thick, chocolatey syrup. It is this syrup that she adds to cake batter for moisture, richness and deep flavor. Note: One shot of espresso equals one teaspoon of espresso powder.

If you don’t have espresso or espresso powder on hand, you can also use a regular cup of coffee instead of the liquid (milk, water, etc.) in the recipe. Just be aware that the chocolate flavor will be slightly less pronounced. But any form of coffee is better than no coffee at all – and for the best results, do use that dutch cocoa that the internet convinced you to buy.

If using cherries, you can use fresh pitted cherries, frozen and unthawed, or jarred and drained.

Ingredients

For the cake:

200 g spelled or all-purpose white flour

150g soft brown, light muscovado or coconut sugar

100g ground almonds

2 teaspoons baking powder

pinch of sea salt

1 cup almond milk

1 teaspoon vanilla extract

1/2 cup light olive oil

150g cherries

100 g dark chocolate chips, 70% cocoa

For dusting:

2 tablespoons processed Dutch cocoa powder

Method:

Preheat the oven to 170°C in convection. Grease or place muffin papers in 10 holes of a large cupcake/muffin tray.

In the bowl of an electric mixer, combine the flour, sugar, ground almonds, baking powder and salt.

Gradually add the milk, vanilla and oil.

Fold in cherries and chocolate chips by hand.

Divide the batter evenly among the 10 holes.

Bake for about 30 minutes or until the pastry is golden brown, springy to the touch, and a knife inserted in the center comes out clean.

Allow cakes to cool for 10 minutes before unmolding onto a cooling rack.

Once the cakes have completely cooled, sprinkle with cocoa powder using a fine sieve.

Serve at room temperature.

Refrigerate in an airtight container for up to 3 days.

Indeed, by deciding to cook, David broke his mother’s heart. Reluctantly and in tears, she agreed to send her son to culinary school.

David remembers his first set of knives. Everyone had the same set and he wanted his to be different. As such, he had his: RyanDavid311 engraved.

He felt more comfortable with his second knife. It reflected his character and personality, plus it was meaningful. His grandfather gave him the ax, bought in China.

Chinese cuisine being his main cooking, David felt that the authenticity of his knife gave him an advantage.

He said jokingly, “It gave me superpowers! It was a mighty extension of my hand.

Family homework called him and David had to leave his first love behind to help with the family business.

Knives by Nacionale Bladeworks

Soon after joining the family business, he started a business called The Perfect White Shirt. His business has gone so well that he barely had time for anything else.

But once a cook, always a cook. In his words, “I couldn’t let go. I was proud of this life. It was an honor to have worked in a professional kitchen.

If he couldn’t be in the kitchen, at least he had to do something about the food.

When he met Karen, now his wife, his passion for food and food preparation was rekindled. Together they built a house and shared the same passion for cooking and kitchen gadgets. Luckily, he’s found a partner who supports all of his hobbies and obsessions, from skateboards to vintage cast iron pans and knives.

Two of his hobbies, skateboards and knives, turned into lucrative businesses. The Davids continued to design knives with handles made from the skateboards they make.

The couple also make cookware for chefs.

There are messages you are happy to receive, like the one from Tiny Guidotti of Cakes by Louise, especially when he says, “We are the family that made Cookie Monster chocolate cakes.

The iconic 70s cake is back and it’s exactly how I remember it. Dense but soft, moist, gooey and chocolatey.

Vicki Guidotti was one of the founders, owners and pastry chefs of Cookie Monster bakery which was established in 1977. At the time, their legendary chocolate cakes were a Sunday staple for virtually everyone. The beloved chocolate cake is making a comeback.

Louise, Manoli and Tiny’s 13-year-old daughter, began cooking with her father and grandmother Vicki during lockdown. The young woman, under the supervision of her lola, has since perfected Vicki’s valuable recipes and now has her own budding home business which she calls Cakes by Louise. In her list is the same old banana cream pie and fruit cake from her lola’s bakery.

When Chef Redd Agustin sends me food from his kitchen, it’s always something to look forward to. It’s no secret that I’m a huge fan of his chicharon pupor and now his luxurious balut pâté.

Silky, smooth, light and sublime whipped, it can only be compared to foie gras pâté, in texture and in the mouth. It’s delicious and my best personal pâté of the year.

Agustin learned how to perfect his balut pâté from his mentor, the late chef Ed Quimson. It’s easy to make and the ingredients aren’t complicated: 16-day-old duck eggs, chicken liver, fresh thyme, cream and butter.

The secret lies in the way the liver is cooked and the brand of butter used.

“Like all dishes, kung ano ang mahal, ‘yun ang masarap,” Agustin joked.
